NaBloPoMo day 3: breakfast of champions

wow, only day 3 and i’m already struggling with post topics. not a good sign for how this month is about to go!  i searched and searched for some prompts i could turn to, but wasn’t really feelin’ any of them either. so,  welcome to a little slice of my daily life.

here’s the deal. i pretty much hate breakfast, y’all. hate it. i find that it is completely ill-timed and inconvenient on most days (i.e. every single day except Saturdays and Sundays.). maybe i still just don’t have this whole evil “real school” morning routine down, but somehow between when my alarm goes off at 6:30 and a few minutes before 9:00 when i actually leave the house (on a good day), i can’t even think about ingesting anything other than my 2 cups of coffee. i mean, who’s even hungry that early? add to that trying to actually eat something healthy that isn’t too carby, too processed or too messy and gaah, i just completely give up.

i went on a huge banana smoothie binge back at the end of the summer/beginning of fall. like every single day, that was my go-to. but now that the weather has turned cooler, downing a Tervis full of puréed ice and bananas just doesn’t really seem very appeeling. (yeah, i take no credit for that one. it’s one of Spy’s standards. he’s here all week, folks . . . ) so as of yesterday, enter the pumpkin yogurt parfait.

i know. pumpkin is like so last month, right? but a girl’s gotta eat and this was some of the random stuff in the fridge/pantry. so save this one up for next fall if you’re totally pumpkined-out already.

i don’t like really sweet things for breakfast and with no extra sweetener, this is just savory enough to not feel like dessert. it’s easiest thing on the planet, pretty healthy and easy to make and carry to work — because that’s about the only way i’m ever gonna get a morning meal down. this will definitely be breakfast at least until the can of pumpkin is gone. i call it an idea, more than a real recipe. enjoy!

1/2 cup Chobani fat-free vanilla yogurt 1/4 cup canned pumpkin 1 tablespoon sliced raw almonds sprinkle of cinnamon
